Trying Quinoa/Pinterest Fail

M and I decided to hop on the quinoa band wagon and in my opinion I hopped off right after... Wasn't a big fan!!

We decided that we would try cooking it in the rice cooker and what a mess. Either M put in too much water or too much quinoa and it spilt all over the counter as it was cooking. The smell of cooking it was not all that pleasant either. We tried the littlest bit plain after it was cooked and in all honesty it wasn't horrible, similar to rice I suppose. However we tried a recipe off of Pinterest.

This could probably be one of those post about how Pinterest failed you, because it pretty much did!
This is the recipe we followed:

2 cups cooked quinoa {I cook quinoa in my rice cooker – 1 cup quinoa & 1 1/4 cup chicken broth}
3 eggs
1 cup zucchini, shredded
1 cup shredded cheddar cheese
1 cup diced ham
1 tablespoon dried parsley
3 tablespoons Parmesan cheese
1/2 small onion, diced {about 1/4 cup}
1/2 teaspoon salt
1/4 teaspoon pepper
Olive oil for the pans

Preheat oven to 350 degrees.
Place all the ingredients in a large bowl and mix to combine. Generously spray 2 mini muffin tins with olive oil { I use a Misto sprayer} and scoop 1 tablespoon into each cup. I like to use a 1 tablespoon cookie scoop for this step. Bake quinoa bites for 18 minutes, or until the edges of the quinoa bites are a nice golden brown. Cool for a few minutes, then remove from pan and eat!

You can find the recipe here.

The only thing I omitted was the zucchini.

I figured this recipe would be a great way to introduce quinoa, however it was just the opposite! All we could really taste was the onion. It pretty much took over the whole taste. It was not good at all!!

M and I still have a bit of quinoa left and we plan to try it again, but most likely we will try it plain!

Do you like quinoa? If so what is your favorite recipe?

Has Pinterest ever let you down?

What I Am Loving/So What

I figured I haven't done a what I am loving post or a So What Wednesday post in a long time, so you can imagine I have quite a bit to share!!

- I am loving that the temperatures are supposed to be above 0 for a while! This makes me happy! It also means some of the snow might melt!

- I am loving that I have reached the weight loss amount of 20 pounds!! This is a huge achievement and this cleanse is still knocking them down. That is pretty much 5 pounds in a week! Crazy! But not complaining about this fact of the cleanse.

- I love all the mail I received yesterday - magazines, gifts from friends, clothing, supplements - all in one day!! Score!!

- Love this springy outfit:

- This is soo sad, but true!

Now for a bit of So What Wednesday:

So What:

- if I ended up sitting out half of last nights Zumba class. I kept getting super hot and dizzy, by the end of the class I had the worst ear ache and ended up having a headache all night. Soo frustrating! Praying its not an ear infection!

- if I ordered some colored skinny jeans and I have to now return them... too short.... tall girl problems!! I never know with Old Navy - their tall stuff is almost too long!!

- if I feel like my tan is fading!! Why can't it just stay?

- if Pinterest and any other food I cannot eat pictures are silently killing me! I miss sugar and cheese dammit!! 3 more weeks!

- if we have to turn the clocks forward this weekend! I hate losing an hour of sleep!! I actually hate it!!

Swingers

This part of Jamaica needed its own blog post.

No M and I did NOT participate, however we were totally exposed to it with no choice.

I can honestly say I had heard about swingers, ya the swing dancers and yes the couples that decide to share partners... and although I have seen swing dancers before, I had never seen swingers before.

How did we know they were swingers? Well let's start from the beginning should we...

M was playing volleyball and this couple joined the game. She decided it would be best to put her bikini top back on for the game... OMG could you imagine if she didn't? They have got to be about 40 years old.  After the game M was hot, the pool was freezing so we decided to go swim in the ocean. The guy that played volleyball with Mike approached us in the ocean and just chatted it up. Seemed like a normal guy. He explained to us that he was there with a group of 6 and that they travel with each other once a year around the same time. I happened to look up on the beach to see that not only was his wife topless again, but 2 of her friends were too. Whatever - not my thing, no judgements... yet... haha

As the week went on, we thought we would see things between the group of 6, but just figured we had the couples mixed up. Until one night, M and I were heading up to our room and were about to get off the elevator when the doors open and sure enough there were 2 of the wives barely clothed, D-RUNK and making out. M and I just kind of looked at each other in shock. Yes we have seen lesbians, however we were not exactly expecting to see THAT when the doors opened. The ladies laughed it off and moved to the side so we could get off. It was at this point that we figured out just what was going on!

We later learned that they had keys to each others rooms and switched it up often. Nonetheless it became humorous when we saw them around the resort.

I think the disturbing part was the fact that they were recruiting. No M and I were not invited - Thank goodness! But we had met people who had been. We also saw their attempts go down at the pool. The poor couples that had no idea what was going on, just thought they were nice people, until the one lady tried to take off the other ladies top... that did not go over well. They quickly learned what was going on.

So, after being fully exposed to swingers and how they role, I still don't get why they do it. They are essentially cheating on each other. I don't really stand for that myself. I don't care if one is or both are, it is still cheating. But each to their own. I am sure after this trip they go home and live their lives as normal people, not letting on that they prefer to switch it up every now and then. It's gotta be a rather secretive life.

Weekend Recap

love this.
1 week into this cleanse. I need to keep on reminding myself of the above quote!! This cleanse has taught me soo much already! Never in my wildest dream did I ever see myself on such a strict eating routine. This is hard!! I'm up for the challenge, but coming from someone who is such a picky eater, it is hard to find foods I like. So far we are 3 dinners in a row that I have enjoyed!! I'm trying my best to not complain about this, it is a choice to continue on with it and it means enough to me to push through. I am also trying my best not to be miserable, but sometimes this is all just a bit overwhelming! Thank goodness M understands me.

Our weekend was pretty good! Friday night we just relaxed.

Saturday morning M made me breakfast and I enjoyed eating it on the couch with my book! I am just about finished my book.
Saturday M and I went grocery shopping and ended up purchasing more that we thought we would! We bought a TV mount for the non-existent flat screen in the basement for 50% off, some yarn, and best of all... the one thing that M and I argue over nightly will no longer be argued.
Most couples argue about who shuts the light off or locks the door when they get in bed, but fortunately or unfortunately our bedroom does not have a light switch. I get hot in the middle of the night and need the fan on, or I will go to bed with the fan on and get cold. So we argue over who shuts it off. Well my friends, we purchased a fan with a remote!! Why the heck have we waited this long? This is excellent!! I can just turn the fan on when I want to and M can shut it off when he wants to!!  Win:Win!!
Saturday afternoon we headed to my sister's for Hannah's birthday!! Can you believe the only picture I took was of my Dad's dog!? Shocker!!
I am pretty sure my Dad's dog Gypsy could be on the commercial for doggy dentures:

Sunday we went and purchased the non-existent flat screen TV, we found a great deal and snagged it and then we had to stop at home depot and buy some hardware for the blinds in the basement and found a new mirror for the mudroom!! I am pretty much in love with it!!
It has almost like black crystals around it!! In love!! And it looks pretty awesome!!
While M and I were busy doing stuff around the house, our pets were having no part of it and just relaxed all day! Even Gracie shared her bed with Binx!! The dogs are pretty happy with mani's and pedi's, as well as a trim around their toes! I can't believe how fast the hair grows on their feet!!

Overall we had a great weekend full of accomplishment, relaxing, shopping and family! Hope everyone else had a great weekend too!

March is Here!!

Wow am I ever happy to see Friday! This week has been crazy!

We started our cleanse on Monday. Yesterday was a bit tough, I wanted everything I couldn't have! Pinterest is the devil, and so are tv commercials! I think just seeing food I couldn't have was just bad!

We juiced for the first time last night! Made raspberry/lemon/orange sorbet and popsicles! Got the idea off of Pinterest!! I will be sure to share soon!!

Work has been crazy!! Hoping today I will get somewhat caught up! A girl can dream right? *** side note, since I am just posting this now, I did manage to get somewhat caught up today and Monday I have no patients, so I anticipate being fully caught up on billing!!

Binx is home! She is doing well! Has some inflammation in her girls parts, so they are treating it as if its an UTI, most likely caused by stress! We blame Jamaica! Haha! We gave her a bath last night because I always worry about what they bring home from the vet. Might just work best or trying to hydrate your cat! She groomed herself crazy!

Hope everyone has a great weekend! M and I haven't really discussed our weekend yet, but I know we will be celebrating someone's 4th Birthday. It's gunna be hard to not have cake!
