Right now I am making two seperate dinners, sometimes three - one for Noah, one for Mike and I to eat later when he gets home, but sometimes he will be too late and I end up making something else for myself.
Spring is crazy around these parts, we often refer to myself as a single mom, because M doesn't get home until almost 7 PM most nights. Last night was no different, add fire practice on top of that (and a power outage), oh and a kid that fell asleep at 8 to wake up at 9 and to stay awake until Daddy got home... He was asleep by 10:45 and then mama followed his lead!! I was beat!! It is long days for us all around here and it shows because the house is a mess, but we are alive and surviving! It's soo hard to get things done with a toddler!

So clearly we are working on finding ways to simplify our life, which means meal planning is a necessity, because not having to sit and figure out dinner or go rummaging through the freezer with a screaming toddler who wants to come too is really not an option.
Typically we prefer to plan it out on the weekend and then if I have to make a run into town for any groceries then I can. Granted I prefer to just go in once a week on Fridays, sometimes a little extra trip in a week is welcomed, but other weeks it just means chaos!

I need to meal plan more. I hate coming up with dinner ideas when I get home from work. Thankfully I only have to make 1 meal though! ;) Delainey eats whatever we do and I just make sure if pleases everyone. I wish I had a personal chef though.
Meal planning (as you know) makes a huge difference my life! I never have to think about it after work, always have the right ingredients and way less food goes to waste I find! I also then can plan all our meals to be Avery friendly as well. We do eat late though, usually around 6:45pm!
I am a huge believer in meal planning and we couldn't survive our evenings without it! We have like 1.5 hours from when we get home to when Sam goes to bed. We live an hour away from the nearest grocery store or restaurant so we HAVE to meal plan to make sure we have food for the week. If you ever want a copy of our meal plan let me know! I'm with you girl! When I take the time to meal plan we eat healthier, spend less money on food and it saves me time in the kitchen BUT sometimes the physical planning part just doesn't happen. I've been trying hard to meal plan & grocery shop on the same day every week to make it a habit. Hopefully that helps and hopefully you figure out a system to stick with it as well!

Meal planning is the only reason we don't eat out every night!!
Usually we do it on Friday night/Saturday morning and then J goes shopping with A Saturday morning. It helps with the stress factor and with food waste.
We aim to eat around 5:30-5:45 or else everyone turns into bears and it's not pretty! J isn't always home until 6pm so it's usually left to me to make the meals during the week so they have to be fast and simple ;)
I love my crockpot and I also like leftover night!
