We decided that we would try cooking it in the rice cooker and what a mess. Either M put in too much water or too much quinoa and it spilt all over the counter as it was cooking. The smell of cooking it was not all that pleasant either. We tried the littlest bit plain after it was cooked and in all honesty it wasn't horrible, similar to rice I suppose. However we tried a recipe off of Pinterest.
This could probably be one of those post about how Pinterest failed you, because it pretty much did!
This is the recipe we followed:
2 cups cooked quinoa {I cook quinoa in my rice cooker – 1 cup quinoa & 1 1/4 cup chicken broth}
3 eggs
1 cup zucchini, shredded
1 cup shredded cheddar cheese
1 cup diced ham
1 tablespoon dried parsley
3 tablespoons Parmesan cheese
1/2 small onion, diced {about 1/4 cup}
1/2 teaspoon salt
1/4 teaspoon pepper
Olive oil for the pans
Preheat oven to 350 degrees.
Place all the ingredients in a large bowl and mix to combine. Generously spray 2 mini muffin tins with olive oil { I use a Misto sprayer} and scoop 1 tablespoon into each cup. I like to use a 1 tablespoon cookie scoop for this step. Bake quinoa bites for 18 minutes, or until the edges of the quinoa bites are a nice golden brown. Cool for a few minutes, then remove from pan and eat!

The only thing I omitted was the zucchini.
M and I still have a bit of quinoa left and we plan to try it again, but most likely we will try it plain!

Aw, bummer that the quinoa didn't work out for you, I love that stuff! My mom makes an amazing black bean summer salad with it, I should try and track down the recipe...
i have failed multiple pinterest recipes and projects! i've never tried quinoa but have always wanted to!
That stinks that you had a bad experience. Any time that I've made it, I've always cooked it in a pot on the stove. I've enjoyed the two things that I've made with it (stop by my blog and check out the recipes page). One was a side dish to go with chicken and the other was quinoa mac and cheese.
I've made it a bunch of times and never had any issues with it. It might be because you tried making it in the rice cooker...I'd suggest just making it in a pot with chicken broth. It has a different texture from rice, but still so good. Do you like cous cous?
